2 Heads Less Red Snapper

Baked red snapper with baked plantains ( I can't believe they are not fried).this combo was just the best😋.




Ingredients I Used:

To make the marinade, blend together :


👨🏾‍🍳 1 small onion.

👨🏾‍🍳 4 garlic cloves.

👨🏾‍🍳 1 teaspoon fresh grated ginger root.

👨🏾‍🍳 Juice of 1 lemon.

👨🏾‍🍳 1 teaspoon sea salt.

👨🏾‍🍳 1 teaspoon chilli flakes.

👨🏾‍🍳 1 teaspoon smoked paprika.

👨🏾‍🍳 1/2 teaspoon ground black pepper.

👨🏾‍🍳 1/4 teaspoon ground nutmeg.

👨🏾‍🍳 2 tablespoon extra virgin olive oil.


Methods:

👨🏾‍🍳 To cook wash fish than pat dry with paper towel.


👨🏾‍🍳 use a sharp knife to slice deep lines through the fish.


👨🏾‍🍳 Pour the prepared marinade over the fish, massage it all over the fish and make sure to get a generous amount inside the slits you just cut.


👨🏾‍🍳 Cover with cling film than let the fish marinade in the fridge for minimum30 minutes. 👨🏾‍🍳 Preheat oven to 180°c.


👨🏾‍🍳 Cover your tray with non stick sheet, place onions sliced on the tray than place the marinated fish on top of the onions.


👨🏾‍🍳 Place it in the oven and bake for 35 to 40 minutes. gently turn and based the fish with it own juice halfway through cooking .


👨🏾‍🍳 Cooking time will vary depending on the size of your fish. The fish is ready when it is no longer pink and it is flaky. 😋👨🏾‍🍳.
