Akara recipe (bean fritters)

Hello foodies, have you ever tasted beans fritters? If so what do you like to serve it with? And what do you call it in your language?


Here is what I used to make them.




Ingredients I Used:

๐Ÿง‘๐Ÿพโ€๐Ÿณ 1 1/2 cup soaked peeled black eye beans.

๐Ÿง‘๐Ÿพโ€๐Ÿณ 1 red bell pepper.

๐Ÿง‘๐Ÿพโ€๐Ÿณ 2 garlic cloves.

๐Ÿง‘๐Ÿพโ€๐Ÿณ 1 vegetable stock.

๐Ÿง‘๐Ÿพโ€๐Ÿณ 1/4 cup water.


๐Ÿง‘๐Ÿพโ€๐Ÿณ Little water to help blending, careful not to use too much, I used about 1/3 cup.


Additives are optional and to taste I Used:


๐Ÿง‘๐Ÿพโ€๐Ÿณ 1 finely diced spring onion.

๐Ÿง‘๐Ÿพโ€๐Ÿณ Half a small onion finely diced.

๐Ÿง‘๐Ÿพโ€๐Ÿณ Salt and pepper to taste.


Methods:

๐Ÿง‘๐Ÿพโ€๐Ÿณ Soak the dried peeled beans in cold water for 1 hours.


๐Ÿง‘๐Ÿพโ€๐Ÿณ Add strained soaked beans to blender plus the garlic, bell pepper and cube stock pour in LITTLE WATER than blend until smooth. Do not over blend it.


๐Ÿง‘๐Ÿพโ€๐Ÿณ Add in the diced onions, season to taste than whisk until batter becomes airy and fluffy.


๐Ÿง‘๐Ÿพโ€๐Ÿณ Preheat oil on medium heat, scoop the mixture in and fry until golden brown, it can take about 3 minutes on each side.


NOTE: YOU CAN BUY THE NON PEEL BLACK EYE PEAS TO MAKE THIS AND GO THROUGH THE PROCESS OF PEELING IT YOURSELF BUT I ALWAYS PREFER READY PEELED BEANS.
