Hello foodies, have you ever tasted beans fritters? If so what do you like to serve it with? And what do you call it in your language?
Here is what I used to make them.
Ingredients I Used:
🧑🏾🍳 1 1/2 cup soaked peeled black eye beans.
🧑🏾🍳 1 red bell pepper.
🧑🏾🍳 2 garlic cloves.
🧑🏾🍳 1 vegetable stock.
🧑🏾🍳 1/4 cup water.
🧑🏾🍳 Little water to help blending, careful not to use too much, I used about 1/3 cup.
Additives are optional and to taste I Used:
🧑🏾🍳 1 finely diced spring onion.
🧑🏾🍳 Half a small onion finely diced.
🧑🏾🍳 Salt and pepper to taste.
Methods:
🧑🏾🍳 Soak the dried peeled beans in cold water for 1 hours.
🧑🏾🍳 Add strained soaked beans to blender plus the garlic, bell pepper and cube stock pour in LITTLE WATER than blend until smooth. Do not over blend it.
🧑🏾🍳 Add in the diced onions, season to taste than whisk until batter becomes airy and fluffy.
🧑🏾🍳 Preheat oil on medium heat, scoop the mixture in and fry until golden brown, it can take about 3 minutes on each side.
NOTE: YOU CAN BUY THE NON PEEL BLACK EYE PEAS TO MAKE THIS AND GO THROUGH THE PROCESS OF PEELING IT YOURSELF BUT I ALWAYS PREFER READY PEELED BEANS.
