These are a delicacy my tribe the Nande people of the Congo make but they are also eaten in Uganda. In Kinande ( from Congo) we call them bitunza and in Uganda, they call them kabalagala. ( What do you call them if you eat them? )
They are simply gluten and sugar-free pancake made with 2 ingredients.
Ingredients I Used:
🧑🏾🍳 Very ripe small bananas ( I had about 9 bananas).
🧑🏾🍳 Cassava flour ( I used less than 1/2 kg flour).
🧑🏾🍳 And I added in 1/2 teaspoon cinnamon just for flavour but that is optional.
Methods:
🧑🏾🍳 Mash the bananas until no lumps, start adding in the cassava flour until you form a firm dough ( the dough shouldn't be too firm, it is okay if it is a little sticky).
🧑🏾🍳 Knead the dough for a few minutes ( just about about 3 minutes).
🧑🏾🍳 Roll on a flat surface to about 1 cm thickness, cup to make round shapes ( I used a cookie cutter).
🧑🏾🍳 Heat up oil in a deep pan on a medium heat, add the pancakes in and fry until brown on both side. Set aside on paper towel to cool a little before serving
Note: as far as I am aware, you can only make these with those African small bananas. The big one will not give you the same result. Also it has to be cassava flour not plain flour. Some people add in sugar but it is not necessary.
I used palm oil to fry these because that is how I saw my grandma making them and oh every bite reminded me of my childhood and my grandma.
