Makoso (Cow Trotters Recipes)

The comfort food I am looking forward to making and eating as the cold weather approaches.

Ingredients I Used:

For 1.5 kg of Cow Trotters


👨🏾‍🍳 1 leek (diced).

👨🏾‍🍳 4 spring onions (diced).

👨🏾‍🍳 A few celery leaves ( diced).

👨🏾‍🍳 3 medium fresh vine tomatoes (diced).

👨🏾‍🍳 1 teaspoon each of a fresh minced garlic and ginger.

👨🏾‍🍳 2 tablespoon pepper soup mix season.

👨🏾‍🍳 Salt and pepper to taste.

👨🏾‍🍳 2 bay leaves.

👨🏾‍🍳 A chilli ( optional).


Methods:

👨🏾‍🍳 Wash and prep all your ingredients. Add all ingredients in a big enough pot.


👨🏾‍🍳 Cover with fresh water ( just enough to cover the meat).


👨🏾‍🍳 Cover, bring to rapid boil and boil for 10 minutes on medium heat.


👨🏾‍🍳 Reduce heat to low, and simmer for 1 to 1: 30 hrs or until the meat has softened to your liking and the sauce has thickened.
