Curry Goat

Hello foodies. I am so excited to share this Jamaican inspired goodness that if you never try, let this be the sign for you to give it a go. It is so easy to make yet full of delicious fresh flavours that you will not be able to stop yourself from eating until is it all gone ( YES IT IS THAT GOOD)


The best place to get good quality goat meat is from the butcher, ask for either leg, shoulder or the neck part bone in and cut into pieces. the bones are where the flavours are so if you can please use bone in meat.




Ingredients:

👩🏾‍🍳 1.5 kg goat meat ( trimmed and washed).

👩🏾‍🍳 2 medium onions diced.

👩🏾‍🍳 5 spring onions diced.

👩🏾‍🍳 1 tablespoon fresh thyme.

👩🏾‍🍳 1 tablespoon fresh minced garlic.

👩🏾‍🍳 1 scotch bonnet finely diced.

👩🏾‍🍳 1 teaspoon minced ginger (fresh).

👩🏾‍🍳 1 tablespoon tomato paste.

👩🏾‍🍳 2 tablespoons oil.

👩🏾‍🍳 700ml to1 l hot water.

👩🏾‍🍳 1 tablespoon soy sauce ( optional).

👩🏾‍🍳 3 medium potatoes quartered.


Dry Seasoning Blend:

👩🏾‍🍳 3 tablespoons curry powder.

👩🏾‍🍳 1 teaspoon ground pimento.

👩🏾‍🍳 1 teaspoon salt ( or to taste).

👩🏾‍🍳 1 teaspoon black pepper.


Methods:

👩🏾‍ Start with washing the goat meat in cold tap water with lemon or lime juice. Drain well and pat dry with kitchen paper.


👩🏾‍🍳 Add the washed meat to a big enough bowl, season the meat with the dry seasoning blend, diced onion, diced spring onion, garlic, thyme, ginger and scotch bonnet. Rub everything well, cover with cling film and allow to marinate in the fridge overnight or for a minimum 2 hours.


👩🏾‍🍳 When ready to cook, remove marinated meat from the fridge and allow it to come to room temperature.


👩🏾‍🍳 Place a heavy bottom pan on a medium heat, add in 2 tablespoons of oil and heat it up. Pour in the marinated meat and fry for about 3 to 4 minutes until the meat is seared on all sides. Add in 1 tablespoon tomato paste and fry for another 1 minute then pour in hot water and season with soy sauce. Bring everything to a boil, once boiling, cover, reduce heat to medium to low and cook for about 1 to 2 hours or until the meat is nice and tender. Remember to occasionally check the meat to make sure there is still enough water and add if needed.


👩🏾‍🍳 During the last 20 minutes of cooking, add the diced potatoes and continue cooking until the potatoes are fully cooked and the sauce has thickened.


👩🏾‍🍳 Serve and enjoy.


This goes well with Jamaican rice and peas.
