Here is a little delicious baked fish inspo.
Ingredients I Used:
If you have never used cooked marinade on your fish? well this is a sign to try.
So for the cooked marinade I used:
๐ง๐พโ๐ณ 1 green bell pepper.
๐ง๐พโ๐ณ 1 onion.
๐ง๐พโ๐ณ 2 bay leaves.
๐ง๐พโ๐ณ 2 spring onion.
๐ง๐พโ๐ณ 5 garlic cloves.
๐ง๐พโ๐ณ 1 teaspoon minced ginger.
๐ง๐พโ๐ณ 1 scotch bonnet for heat.
๐ง๐พโ๐ณ Juice of 1 small lemon.
๐ง๐พโ๐ณ 1/2 cup olive oil.
๐ง๐พโ๐ณ 1 teaspoon dried herbs ( persil and oregano).
๐ง๐พโ๐ณ Salt and pepper to taste.
Methods:
๐ง๐พโ๐ณ Blend all the ingredients then pour the mixture on a frying pan. Cook on medium heat for about 15 to 20 minutes until oil bubbles on top and the ingredients fry and caramelise well.
๐ง๐พโ๐ณ Let this cool completely before rubbing it on the fish.
๐ง๐พโ๐ณ Season fish with enough salt and pepper to taste then rub with the cooked marinade. Place in the fridge to marinade for 1 hour.
๐ง๐พโ๐ณ Preheat oven to 180ยฐc grill option, place fish on oven wire rack then put in the preheated oven and grill for about 15 to 20 minutes on each side. Rub with remaining marinade before flipping sides. Cooking time will depend on fish size, mine was quite large so it took a total of 40 minutes to fully cook.
