Leg Of Lamb Roast

Hallo foodies. Hope you have had a good Easter Sunday. What did you eat today?


Here is a simple garlic and herbs marinade I used for our roast and it was sooooo good, I couldn't wait to share.




Ingredients I Used:

The leg of lamb was 2.150 kg so for that I used


👨🏾‍🍳 5 garlic cloves.

👨🏾‍🍳 A handful of fresh sage, thyme and rosemary.

👨🏾‍🍳 1 hot chilli.


For The Binder I Used:

👨🏾‍🍳 1/4 cup olive oil.

👨🏾‍🍳 1 teaspoon mustard.

👨🏾‍🍳 1/2 teaspoon maple butter( can be sub with maple syrup).


Dry Flavours I Used:

👨🏾‍🍳 1/2 tablespoon salt.

👨🏾‍🍳 1 teaspoon freshly grated black pepper.

👨🏾‍🍳 1 teaspoon ground white pepper.


Methods:

👨🏾‍🍳 I cooked mine in a smoker at 190°c . If using the oven preheat the oven to the same temp of 190°c .


👨🏾‍🍳 Cook it for about 2 hours or until the internal temperature of the thickest side reads 68° c to 70 ° c for a medium well done. So cook it to how you like your meat cooked.


👨🏾‍🍳 Before serving, I covered the meat and allowed it to rest for 20 minutes. This helps make the meat juicy and tender which it was👌🏾👌🏾. So always rest your meat 😊.
