Mikate/Puff Puff Recipe

Hello foodies 👋🏽. Here is a weekend baking inspo, the humble mikate/ puff puff. These are infused with banana and a hint of nutmeg 👌🏾.




Ingredients I Used:

To Make These I Used:


👨🏾‍🍳 3 cups of self-raising flour.

👨🏾‍🍳 1/2 cup sugar ( or more to your liking).

👨🏾‍🍳 1/4 teaspoon freshly ground nutmeg.

👨🏾‍🍳 2 tablespoon milk powder ( I used Nido).

👨🏾‍🍳 1 sachet yeast (7g).

👨🏾‍🍳 A pinch of salt.

👨🏾‍🍳 1 ripe large banana mashed.

👨🏾‍🍳 About up to 2 cups of warm water.( The water depends so add it in stages, you might need more or less).


Methods:

👩🏾‍🍳 Add all dry ingredients in large bowl and mix well.


👩🏾‍🍳 Add the water a little bit at a time while mixing with either your hand or a spatula until you get a thick and silky consistency then fold in the mashed banana.


👩🏾‍🍳 Cover and place in warm place until it doubles in size, about 1 to 2 hours.


👩🏾‍🍳 Before frying deflate the dough and fry in preheated oil just as seen in the video. Your oil should not be too hot, if too hot they might burn and not cooked through and if not hot enough they will absorb oil. To know that your oil is ready, try frying one first until cook and that will give you an accurate indication.
