Happy hump day foodies.
Coming up for dinner is baked catfish. I remember the first catfish I ate was at @smoothcecilia_misi mum house š ( the good old days when your mum used to have parties. Look at us now all grown up mothers and responsible š). Any way, here is the marinade I came up with. I used dried herbs because I have run out of fresh one but I usually prefer using fresh herbs with fish.
Ingredients I Used:
My fish is 1.2 kg
š©š¾āš³ 1/4 cup Extra virgin olive oil.
š©š¾āš³ 1/4 cup fresh minced onion.
š©š¾āš³ 1 unwaxed lemon ( juice and zest).
š©š¾āš³ 4 minced garlic cloves.
š©š¾āš³ 1tablespoon dark soy sauce.
š©š¾āš³ 1 tablespoon Chipotle chilli flakes.
š©š¾āš³ 1 teaspoon grated ginger.
š©š¾āš³ 1 teaspoon dried coriander leaves.
š©š¾āš³ 1 teaspoon dried parsley.
š©š¾āš³ 1 teaspoon smoked paprika.
š©š¾āš³ 1 teaspoon dried dill.
š©š¾āš³ 1 teaspoon dried oregano.
š©š¾āš³ 1/2 teaspoon nutmeg.
š©š¾āš³ Salt and black pepper to taste.
Let me just tell you, fingers were licked ššš. This fish came out so juicy and busting with flavours.
So I seasoned the fish with the marinade from previous post and let it marinate in the fridge for 2 hours than place it on the bed of vegetables and baked in preheated oven at 180Ā°c fan oven or 200Ā° c for non fan oven for 50 minutes turn halfway through cooking.
