Quick midweek dinner: Sausage and pasta

Okay foodies, when it comes to quick and delicious dinners, this easy pasta recipe is definitely one of those. All you need is a few ingredients, 20 minutes of your time and dinner will be at the table in no time. The delicious premium pork sausages from the porky whites combined with a tomato, garlic, onion, and bell pepper sauce with added flavours from fresh parmesan and basil bring this hearty and comforting meal together that I hope your family will enjoy each bite of it as my family did. let cook



Ingredients used

400g penne pasta

6 good quality sausages

2 tablespoons olive oil

1 purple onion sliced

3 garlic cloves minced

1 red bell pepper sliced

1 can peeled plum tomatoes crushed (400g can)

Salt and freshly grated black pepper to taste

1 teaspoon each of dried oregano and chili flakes

1 Vegetable cube stock

A handful of freshly grated parmesan

A handful of fresh basil


Method

Step one

Cook Pasta according to packaging instructions then drain and set aside. Reserve some of the pasta water for later

( about 1 cup)

Step 2

In a large enough pan, pour in the oil and heat over medium to high heat. Add in the sausages and cook until browned on all sides. Remove the browned sausages and set aside.

Step 3

In the same pan, add the sliced onion and saute for 1 minute then add in the minced garlic and the seasoning ( dried oregano and chili flakes) and saute for about 30 seconds to 1 minute, this will heat the seasoning up and enhance their flavour. Then add in the sliced bell pepper and the plum tomatoes, and continue cooking stirring constantly for about 2 minutes then add a vegetable cube stock with 1 cup of hot water to allow the stock to melt. Season with sat and pepper to taste.

Step4

Slice the browned sausages into small bite size pieces then return them to the sauce, mix well, reduce heat to medium and continue cooking until the sausages are fully cooked. Mine were fully cooked in 10 minutes.

Step 5

Once the sausages are fully cooked, add a handful of grated parmesan cheese and fresh basil to the sauce then add in the cooked pasta and reheat for a few minutes, stirring gently. If the sauce is not enough, add some of the pasta water we kept and mix well.

To serve, garnish with some more grated parmesan and a few basil leaves. Enjoy
