Ingredients I Used:
Full lamb shoulder bone in ( mine was just over 2 kg)
👩🏾🍳 2 tablespoons olive oil.
👩🏾🍳 3 tablespoons lamb seasoning ( I used the @schwartz.uk lamb seasoning blend).
👩🏾🍳 2 onions chopped into thick round discs.
👩🏾🍳 A few spring of fresh rosemary.
👩🏾🍳 1 garlic bulb.
👩🏾🍳 3 cups vegetable stock.
Methods:
👩🏾🍳 Preheat oven to 170°c / 150° c for fan assisted oven.
👩🏾🍳 Place the onion, rosemary and garlic in the middle of a deep roasting tin.
👩🏾🍳 Rub the olive oil all over the lamb. Sprinkle the lamb seasoning on each side and massage it in.
👩🏾🍳 Place the lamb on top on the onions fat side up.
👩🏾🍳 Pour the vegetables stock around the lamb ( not over the lamb).
👩🏾🍳 Cover with foil or the over of the oven tin and bake in the preheated oven for 3 hours.
👩🏾🍳 Halfway through cooking, use a spoon to pour the stock over the lamb.
👩🏾🍳 After 3 hours, remove lamb from the oven, change oven settings to grill on high, uncover the lamb and grill for 10 to 15 minutes, basting with the stock occasionally.
👩🏾🍳 Remove from the grill, place on the serving tray and cover with foil and kitchen towel and allow to rest for 15 to 20 minutes. ( Very important to allow the meat to rest).
👩🏾🍳 While the meat is resting make the gravy with the stock.
Serve with all your favourite sides and enjoy 😋.
