Any fun of slow roasted lamb in the house? Well here is something very delicious and so easy to make and stays nice and juicy for days๐๐พ๐.

Ingredients I Used:
Full lamb shoulder bone in ( mine was just over 2 kg)
๐ฉ๐พโ๐ณ 2 tablespoons olive oil.
๐ฉ๐พโ๐ณ 3 tablespoons lamb seasoning ( I used the @schwartz.uk lamb seasoning blend).
๐ฉ๐พโ๐ณ 2 onions chopped into thick round discs.
๐ฉ๐พโ๐ณ A few spring of fresh rosemary.
๐ฉ๐พโ๐ณ 1 garlic bulb.
๐ฉ๐พโ๐ณ 3 cups vegetable stock.
Methods:
๐ฉ๐พโ๐ณ Preheat oven to 170ยฐc / 150ยฐ c for fan assisted oven.
๐ฉ๐พโ๐ณ Place the onion, rosemary and garlic in the middle of a deep roasting tin.
๐ฉ๐พโ๐ณ Rub the olive oil all over the lamb. Sprinkle the lamb seasoning on each side and massage it in.
๐ฉ๐พโ๐ณ Place the lamb on top on the onions fat side up.
๐ฉ๐พโ๐ณ Pour the vegetables stock around the lamb ( not over the lamb).
๐ฉ๐พโ๐ณ Cover with foil or the over of the oven tin and bake in the preheated oven for 3 hours.
๐ฉ๐พโ๐ณ Halfway through cooking, use a spoon to pour the stock over the lamb.
๐ฉ๐พโ๐ณ After 3 hours, remove lamb from the oven, change oven settings to grill on high, uncover the lamb and grill for 10 to 15 minutes, basting with the stock occasionally.
๐ฉ๐พโ๐ณ Remove from the grill, place on the serving tray and cover with foil and kitchen towel and allow to rest for 15 to 20 minutes. ( Very important to allow the meat to rest).
๐ฉ๐พโ๐ณ While the meat is resting make the gravy with the stock.
