Slow Roasted Lamb

Any fun of slow roasted lamb in the house? Well here is something very delicious and so easy to make and stays nice and juicy for days๐Ÿ‘Œ๐Ÿพ๐Ÿ˜‹.

Ingredients I Used:

Full lamb shoulder bone in ( mine was just over 2 kg)


๐Ÿ‘ฉ๐Ÿพโ€๐Ÿณ 2 tablespoons olive oil.

๐Ÿ‘ฉ๐Ÿพโ€๐Ÿณ 3 tablespoons lamb seasoning ( I used the @schwartz.uk lamb seasoning blend).

๐Ÿ‘ฉ๐Ÿพโ€๐Ÿณ 2 onions chopped into thick round discs.

๐Ÿ‘ฉ๐Ÿพโ€๐Ÿณ A few spring of fresh rosemary.

๐Ÿ‘ฉ๐Ÿพโ€๐Ÿณ 1 garlic bulb.

๐Ÿ‘ฉ๐Ÿพโ€๐Ÿณ 3 cups vegetable stock.

Methods:

๐Ÿ‘ฉ๐Ÿพโ€๐Ÿณ Preheat oven to 170ยฐc / 150ยฐ c for fan assisted oven.

๐Ÿ‘ฉ๐Ÿพโ€๐Ÿณ Place the onion, rosemary and garlic in the middle of a deep roasting tin.

๐Ÿ‘ฉ๐Ÿพโ€๐Ÿณ Rub the olive oil all over the lamb. Sprinkle the lamb seasoning on each side and massage it in.

๐Ÿ‘ฉ๐Ÿพโ€๐Ÿณ Place the lamb on top on the onions fat side up.

๐Ÿ‘ฉ๐Ÿพโ€๐Ÿณ Pour the vegetables stock around the lamb ( not over the lamb).

๐Ÿ‘ฉ๐Ÿพโ€๐Ÿณ Cover with foil or the over of the oven tin and bake in the preheated oven for 3 hours.

๐Ÿ‘ฉ๐Ÿพโ€๐Ÿณ Halfway through cooking, use a spoon to pour the stock over the lamb.

๐Ÿ‘ฉ๐Ÿพโ€๐Ÿณ After 3 hours, remove lamb from the oven, change oven settings to grill on high, uncover the lamb and grill for 10 to 15 minutes, basting with the stock occasionally.

๐Ÿ‘ฉ๐Ÿพโ€๐Ÿณ Remove from the grill, place on the serving tray and cover with foil and kitchen towel and allow to rest for 15 to 20 minutes. ( Very important to allow the meat to rest).

๐Ÿ‘ฉ๐Ÿพโ€๐Ÿณ While the meat is resting make the gravy with the stock.

Serve with all your favourite sides and enjoy ๐Ÿ˜‹.
