The Fluffiest Pancake

Happy Friday foodies. If you have been following my story you know we have just made these with the boys and omg the fluffiest pancake ever๐Ÿ‘Œ๐Ÿพ๐Ÿ˜‹.


Here is how we made them:




Ingredients I Used:

For 10 pancakes


Dry Ingredients:


๐Ÿง‘๐Ÿพโ€๐Ÿณ 1 cup plain flour.

๐Ÿง‘๐Ÿพโ€๐Ÿณ 2 tablespoons sugar.

๐Ÿง‘๐Ÿพโ€๐Ÿณ 11/4 teaspoon baking powder.

๐Ÿง‘๐Ÿพโ€๐Ÿณ 1/4 teaspoon bicarbonate of soda.

๐Ÿง‘๐Ÿพโ€๐Ÿณ 1/4 teaspoon salt.


Wet ingredients:


๐Ÿง‘๐Ÿพโ€๐Ÿณ 1 cup Greek yoghurt ( or plain yoghurt).

๐Ÿง‘๐Ÿพโ€๐Ÿณ 2 tablespoons melted butter.

๐Ÿง‘๐Ÿพโ€๐Ÿณ 2 medium eggs.

๐Ÿง‘๐Ÿพโ€๐Ÿณ 1/4 cup whole milk.

๐Ÿง‘๐Ÿพโ€๐Ÿณ 1 teaspoon vanilla extract.


Methods:

๐Ÿ‘ฉ๐Ÿพโ€๐Ÿณ In a big enough bowl, Combine all the dry ingredients, mix well and set aside.


๐Ÿ‘ฉ๐Ÿพโ€๐Ÿณ In an other bowl, whisk together the wet ingredients.


๐Ÿ‘ฉ๐Ÿพโ€๐Ÿณ Add the whisk wet to the dry mixture and gently whisk until combined.


๐Ÿ‘ฉ๐Ÿพโ€๐Ÿณ Heat a non stick pan on medium heat, brush with a little butter or spray oil. Spoon the batter evenly ( I use an ice cream scoop ) and cook until bubbles form on the surface of the pancakes, takes about 2 minutes. Flip the pancakes using a spatula and cook until the other side is golden brown. Transfer the cooked pancakes on a plate.


๐Ÿ‘ฉ๐Ÿพโ€๐Ÿณ Cook this in batches, do not overcrowd the pan, do not cook on very high heat.


๐Ÿ‘ฉ๐Ÿพโ€๐Ÿณ Once all ready, serve with your favourite topping. We served ours with some Greek yogurt, chocolate shavings and maple syrup ๐Ÿ˜‹๐Ÿ‘Œ๐Ÿพ
