Happy Friday foodies. If you have been following my story you know we have just made these with the boys and omg the fluffiest pancake ever๐๐พ๐.
Here is how we made them:
Ingredients I Used:
For 10 pancakes
Dry Ingredients:
๐ง๐พโ๐ณ 1 cup plain flour.
๐ง๐พโ๐ณ 2 tablespoons sugar.
๐ง๐พโ๐ณ 11/4 teaspoon baking powder.
๐ง๐พโ๐ณ 1/4 teaspoon bicarbonate of soda.
๐ง๐พโ๐ณ 1/4 teaspoon salt.
Wet ingredients:
๐ง๐พโ๐ณ 1 cup Greek yoghurt ( or plain yoghurt).
๐ง๐พโ๐ณ 2 tablespoons melted butter.
๐ง๐พโ๐ณ 2 medium eggs.
๐ง๐พโ๐ณ 1/4 cup whole milk.
๐ง๐พโ๐ณ 1 teaspoon vanilla extract.
Methods:
๐ฉ๐พโ๐ณ In a big enough bowl, Combine all the dry ingredients, mix well and set aside.
๐ฉ๐พโ๐ณ In an other bowl, whisk together the wet ingredients.
๐ฉ๐พโ๐ณ Add the whisk wet to the dry mixture and gently whisk until combined.
๐ฉ๐พโ๐ณ Heat a non stick pan on medium heat, brush with a little butter or spray oil. Spoon the batter evenly ( I use an ice cream scoop ) and cook until bubbles form on the surface of the pancakes, takes about 2 minutes. Flip the pancakes using a spatula and cook until the other side is golden brown. Transfer the cooked pancakes on a plate.
๐ฉ๐พโ๐ณ Cook this in batches, do not overcrowd the pan, do not cook on very high heat.
๐ฉ๐พโ๐ณ Once all ready, serve with your favourite topping. We served ours with some Greek yogurt, chocolate shavings and maple syrup ๐๐๐พ
