Hello foodies๐๐พ. I hope you are all well.
Since we have had a few new foodie family joining us, let revisit some of the delicious meal we have loved.
If you are a fish lover, you are definitely going to love this one.

Ingredients I Used:
1 whole red snapper, cleaned, scaled, gutted and fins trimmed.
๐ฉ๐พโ๐ณ 2 spring onions.
๐ฉ๐พโ๐ณ Half green pepper.
๐ฉ๐พโ๐ณ 1/2 cup fresh coriander.
๐ฉ๐พโ๐ณ 3 garlic cloves.
๐ฉ๐พโ๐ณ 1teaspoon fresh minced ginger.
๐ฉ๐พโ๐ณ Zest of 1 lemon.
๐ฉ๐พโ๐ณ Juice of half a lemon.
๐ฉ๐พโ๐ณ 1/4 cup extra olive oil.
Add all in blender and mix until smooth.
Than to the smooth blend I added
๐ฉ๐พโ๐ณ 1 teaspoon salt.
๐ฉ๐พโ๐ณ 1/2 teaspoon freshly ground black pepper.
๐ฉ๐พโ๐ณ 1teaspoon smoked paprika.
๐ฉ๐พโ๐ณ 1/4 grated nutmeg.
Methods:
Mix well and set aside .
๐ฉ๐พโ๐ณ Pat the fish dry than with a sharp knife, make 4 to 5 slips on each side of the fish all the way to the bone. Fill the slits with the marinade mixture, put some in the gut, the cavity and make sure the entire fish is covered with marinade.
๐ฉ๐พโ๐ณ Place fish on a plate than cover with clingfilm and put in the fridge to marinate for 2 hours for best results.
Preheat oven to 200ยฐc fan oven ( adjust according to your oven type). For the vegetables bed, I had
๐ฉ๐พโ๐ณ 2 sliced onion.
๐ฉ๐พโ๐ณ 1 sliced green pepper.
๐ฉ๐พโ๐ณ 1sliced red pepper.
๐ฉ๐พโ๐ณ 2 sliced carrots.
