Whole Red Snapper

Hello foodies👋🏾. I hope you are all well.


Since we have had a few new foodie family joining us, let revisit some of the delicious meal we have loved.

If you are a fish lover, you are definitely going to love this one.




Ingredients I Used:

1 whole red snapper, cleaned, scaled, gutted and fins trimmed.


👩🏾‍🍳 2 spring onions.

👩🏾‍🍳 Half green pepper.

👩🏾‍🍳 1/2 cup fresh coriander.

👩🏾‍🍳 3 garlic cloves.

👩🏾‍🍳 1teaspoon fresh minced ginger.

👩🏾‍🍳 Zest of 1 lemon.

👩🏾‍🍳 Juice of half a lemon.

👩🏾‍🍳 1/4 cup extra olive oil.


Add all in blender and mix until smooth.

Than to the smooth blend I added


👩🏾‍🍳 1 teaspoon salt.

👩🏾‍🍳 1/2 teaspoon freshly ground black pepper.

👩🏾‍🍳 1teaspoon smoked paprika.

👩🏾‍🍳 1/4 grated nutmeg.


Methods:

Mix well and set aside .


👩🏾‍🍳 Pat the fish dry than with a sharp knife, make 4 to 5 slips on each side of the fish all the way to the bone. Fill the slits with the marinade mixture, put some in the gut, the cavity and make sure the entire fish is covered with marinade.


👩🏾‍🍳 Place fish on a plate than cover with clingfilm and put in the fridge to marinate for 2 hours for best results.

Preheat oven to 200°c fan oven ( adjust according to your oven type). For the vegetables bed, I had


👩🏾‍🍳 2 sliced onion.

👩🏾‍🍳 1 sliced green pepper.

👩🏾‍🍳 1sliced red pepper.

👩🏾‍🍳 2 sliced carrots.
