Whole Red Snapper

Hello foodies๐Ÿ‘‹๐Ÿพ. I hope you are all well.


Since we have had a few new foodie family joining us, let revisit some of the delicious meal we have loved.

If you are a fish lover, you are definitely going to love this one.




Ingredients I Used:

1 whole red snapper, cleaned, scaled, gutted and fins trimmed.


๐Ÿ‘ฉ๐Ÿพโ€๐Ÿณ 2 spring onions.

๐Ÿ‘ฉ๐Ÿพโ€๐Ÿณ Half green pepper.

๐Ÿ‘ฉ๐Ÿพโ€๐Ÿณ 1/2 cup fresh coriander.

๐Ÿ‘ฉ๐Ÿพโ€๐Ÿณ 3 garlic cloves.

๐Ÿ‘ฉ๐Ÿพโ€๐Ÿณ 1teaspoon fresh minced ginger.

๐Ÿ‘ฉ๐Ÿพโ€๐Ÿณ Zest of 1 lemon.

๐Ÿ‘ฉ๐Ÿพโ€๐Ÿณ Juice of half a lemon.

๐Ÿ‘ฉ๐Ÿพโ€๐Ÿณ 1/4 cup extra olive oil.


Add all in blender and mix until smooth.

Than to the smooth blend I added


๐Ÿ‘ฉ๐Ÿพโ€๐Ÿณ 1 teaspoon salt.

๐Ÿ‘ฉ๐Ÿพโ€๐Ÿณ 1/2 teaspoon freshly ground black pepper.

๐Ÿ‘ฉ๐Ÿพโ€๐Ÿณ 1teaspoon smoked paprika.

๐Ÿ‘ฉ๐Ÿพโ€๐Ÿณ 1/4 grated nutmeg.


Methods:

Mix well and set aside .


๐Ÿ‘ฉ๐Ÿพโ€๐Ÿณ Pat the fish dry than with a sharp knife, make 4 to 5 slips on each side of the fish all the way to the bone. Fill the slits with the marinade mixture, put some in the gut, the cavity and make sure the entire fish is covered with marinade.


๐Ÿ‘ฉ๐Ÿพโ€๐Ÿณ Place fish on a plate than cover with clingfilm and put in the fridge to marinate for 2 hours for best results.

Preheat oven to 200ยฐc fan oven ( adjust according to your oven type). For the vegetables bed, I had


๐Ÿ‘ฉ๐Ÿพโ€๐Ÿณ 2 sliced onion.

๐Ÿ‘ฉ๐Ÿพโ€๐Ÿณ 1 sliced green pepper.

๐Ÿ‘ฉ๐Ÿพโ€๐Ÿณ 1sliced red pepper.

๐Ÿ‘ฉ๐Ÿพโ€๐Ÿณ 2 sliced carrots.
